Tantō Is Open in Tampa Heights — An Intimate Japanese Cocktail Lounge From the Team Behind Michelin-Starred Kōsen

TAMPA, FL — One of the most anticipated bar openings in Tampa Bay is now open and already drawing a devoted following. Tantō, the intimate Japanese-inspired cocktail lounge from the team behind Michelin-starred Kōsen, has officially opened its doors at 306 W Palm Avenue in Tampa Heights — right next door to its acclaimed omakase sibling.

With just 25 seats, Tantō is built around exclusivity and intention. This is not a loud cocktail bar with a packed room and a DJ. It's a quiet, precise, deeply considered drinking experience — one where every drink is treated with the same craft and reverence that Kōsen brings to its food.

What to Drink

The menu at Tantō is built around rare Japanese spirits, small-batch fermentations, housemade bitters and liqueurs, and hand-cut ice. Beverage Director Mike Western — a Florida native with a resume spanning farm-to-table kitchens in Denver, Los Angeles, and the Bahamas — leads the program with a focus on drinks that feel like a course, not just a glass.

For guests who want a full evening, Tantō offers a selection of small plates drawn from Kōsen's kitchen, reimagined for a cocktail-pairing context. Think the precision of omakase, applied to a cocktail bar.

The Experience

Shoji screens soften the lighting. The open kitchen keeps the energy present without being intrusive. Seating is limited to 25 guests — no bar seating, no walk-in guarantee during busy nights. Reservations are strongly recommended.

"This isn't just a lounge," said Western. "It's a love letter to Japanese technique, Tampa's creative energy, and the belief that every detail matters."
